Add 3-4 spoons of Planet of Plants Mayonnaise, mustard, chopped parsley, lemon juice, and a pinch of salt to the cooked chickpeas. Mix until all ingredients are combined.
Slice the cucumber into rounds, the avocado into slices, and use a peeler to cut the carrot into thin strips.
Slice the buns in half and add the chickpeas with mayonnaise to the bottom half. Then add the carrot strips and avocado slices. Add a little pepper to the avocado, then add the radish and beetroot sprouts. Add some more mayonnaise on top of the ingredients, cover with the top half of the bun and serve.
