Separate the egg yolks from the egg whites. Beat the egg whites with a mixer (add a bit of salt).
In a separate bowl, whisk the egg yolks with the sugar, then add the flour, baking powder, and milk. Then mix in the whisked egg whites.
Melt the Planet of Plants Coconut Oil in a pan and pour about two tablespoons of the mixture for each pancake. Fry the pancakes on both sides.
Serve the pancakes stacked on top of each other or overlapping. In both cases, pour the maple syrup over the pancakes, then add the coconut-flavoured yoghurt or whipped cream, and finally, fruit according to taste. Drizzle the pancakes with a little more maple syrup. You can garnish them with mint leaves.
