Heat the oil in a pan and fry the nuggets over medium heat for 10-15 minutes until golden, flipping occasionally.
Slice the tomatoes and cucumber, cut the red onion into rings, and tear the lettuce into smaller pieces.
Mix the yoghurt, mayonnaise, lemon juice, mustard, salt, pepper, and chopped chives into a sauce. Instead of this sauce, you can also use the readymade Planet of Plants Dressing.
Slice the buns in half and fry the cut sides in olive oil.
Prepare the “fish burgers” by spreading the sauce on the cut side of the buns, then placing the nuggets, lettuce, onion, tomatoes, cucumber, and sprouts, to taste, in the middle.
