Hot Dogs with Feta Cheese, Greek Yoghurt, and Fried Egg

Hot dogs – quick, delicious, and never boring, especially when they are plant-based
Serves: 2

Planet of Plants Hot Dogs 4 pcs

  • 2 eggs
  • 200 g feta cheese
  • 300 g Greek yoghurt
  • ½ cucumber
  • 6 cherry tomatoes
  • baby spinach
  • 1 tablespoon lemon juice
  • fresh parsley
  • dried oregano
  • olive oil
  • chilli flakes
  • pepper
  • salt

Mix the feta cheese and Greek yoghurt in a bowl using a fork, whisk, or mixer. Stir in the chopped fresh parsley and spread the mixture on the bottom of two plates.

Mix the baby spinach leaves, cucumber cut into rounds and cherry tomatoes cut in half, season with oil and lemon juice and divide between the two plates, placing the salad on top of the mixture of feta cheese and yoghurt.

Make sunny-side up fried eggs and place them on top of the cheese and yoghurt mixture. Season them with dried oregano and a bit of salt and pepper.

Fry the hot dogs in a frying pan with a little heated oil for 5-7 minutes, turning them occasionally. Put two fried hot dogs on each plate.

Add 3-4 tablespoons of olive oil to the pan, add the chilli flakes, heat briefly and pour over the dish. Serve with pita bread, flatbread, or focaccia.
