Preheat the oven to 200°C. Cook the quinoa and bulgur mix according to packaging directions. If you wish, you can use only one type.
Slice the peppers (red, yellow, and/or green) lengthwise and deseed them. Finely chop the shallot and garlic.
Melt a cube of Planet of Plants Coconut Oil in a large pan and add the shallots. Let sauté for a few minutes, then add the garlic, stir and after half a minute add the Planet of Plants Mince and break it up with a spatula. Let simmer for about 5 minutes, pour in the tomato passata. Add the spinach leaves and stir until the spinach wilts. Season with salt and pepper.
Stir the cooked mixture of quinoa and bulgur into the mince. Drizzle olive oil over the peppers and fill them with the mixture. Sprinkle with grated cheese and bake in the oven for approx. 30 minutes.
Serve warm with leafy lettuce and, if desired, sprinkle the peppers with a little more cheese.
